Weekly Food Prep is my proven key to success.  When I don't have easily accessible clean food, I tend to eat out a lot more often and eat foods I try and avoid.  Shopping and cooking in the same day is vital.  If i don't clean and prepare my produce it tends to go bad before I use it.  The most important things I need are tasty cooked proteins and washed and ready-to-eat fruits and vegetables.  Since I am a single mother of 2 I also prep some foods for the kids, this makes packing healthy lunches and whipping up quick dinners a breeze.
This week I chose chicken breast and lean steak (london broil) as my proteins.  I marinated both of them for a few hours before cooking.  Marinading is a great way to pack a huge flavor punch without a lot of calories.  The chicken was soaked in a lemon garlic marinade and the beef was soaked in a balsamic, soy, garlicky concoction.
The cooked vegetable this week was roasted fresh string beans tossed in olive oil and spices, roasted in a blazing hot oven.  I always keep cold garden salad ingredients on hand because that is a daily staple in my diet and I really love how versatile salad is.  For fruit this week I  washed and pitted 3 lbs of perfectly amazing black cherries for snacking.  Hard boiled eggs are another prep day essential.  I peel them in the morning and throw them in a disposable cup all mashed up for a quick breakfast on the way to the gym.
I don't always make drinks but since i'm trying to cut out soda (again) I prepared watermelon lemon juice and fresh brewed passion fruit ice tea.
Thank you Kimberly James for the inspiration this week!
